In riva al fiume - By the River

Una delle più grandi soddisfazioni degli utlimi giorni è stata quella di essermi sentita chiedere in quale ristorante ero andata per la cena del mio anniversarsio, di cui avevo postato le foto su facebook.
Nessun ristorante, ma solo casa del mio ragazzo, e tanto amore, 5 portate più il dessert, ed ovviamente nei prossimi giorni saranno tutte a vostra disposizione.
Oggi vi lascio con quella che doveva essere la sesta porzione, ma purtroppo non avevo a disposizione tutti gli ingredienti, il titolo di questo post la dice lunga: "in riva al fiume", con gli ingredienti che si possono trovare nei pressi di un corso d'acqua dolce, niente carne o pesce però, e niente farine, il chè la rende una ricetta praticamente adatta a tutti...


La ricetta dei "sassi" è deliberatamente inspirata alla ricetta di Andoni Luis Aduriz, chef del Mugaritz, realizzata con le dovute modifiche, ed un contorno tutto naturale.
Andoni cuoce in una miscela di argilla bianca e lattosio delle patate, che poi serve con una maionese all'aglio, io ho pensato di trasferire questa ricetta in riva al fiume, ed utilizzare tutto ciò che la natura selvaggia mi avrebbe donato, le patate quindi si sono trasformate in castagne d'acqua, l'acqua con cui ho impastato argilla e lattosio con un infuso di erbe e funghi selvatici, un'insalata liquida di songino e cerfoglio su cui ho adagiato il tutto ed una granella croccante di pistacchio, a dare brio germogli di finocchietto selvatico e profumati fiori di begonia bianca, che al contrario dei classici rossi hanno un retrogusto fruttato, dolciastro e limonoso che si sposa a meraviglia con gli altri ingredienti.

In riva al fiume 





Per l'insalata liquida

50 g di songino
50 g di cerfoglio
1 cucchiaino di aceto di mele
1 presa di sale
1 presa di pepe bianco macinato fresco
20 g di olio di oliva gusto leggero
acqua frizzante freddissima q.b

Unite tutti gli ingredienti tranne l'acqua in un blender, frullate unendo poca acqua a filo fono ad ottenere una crema liscia e vellutata, coprite con la pellicola e tenete da parte.

Per i "sassi" di castagne d'acqua dolce


castagne d'acqua dolce Asiamarket
150 ml di tè lapsang
sale
pepe
pepeoncino
1 cipollina
1 gambo di sedano
1 peperone verde
3 goce di tabasco
1 cucchiaino di fumo liquido

Scolate le castagne d'acqua d'olce dal loro liquido di salamoia e cuocetele in un brodo molto saporito realizzato con gli ingredienti sopra elencati.
Quando saranno saporite scolatele e fatele sciugare su un panno.

Per il rivestimento

 

60 g di caolino (argilla bianca per uso alimentare)
40 g di lattosio
1 presa di cenere di porri
40 ml di acqua
10 ml di salsa di soia
10 ml di fumo liquido
10 ml di acqua effervescente naturale ricca di minerali
1 cucchiaio di aceto balsamico Giuseppe Giusti

Unite tutti gli ingredienti ed impastate energicamente, immergete le castagne d'acua ben asciugate e lasciate che si rivestano di un velo sottilissimo, mettete a sgocciolare l'eccesso appuntando lo stuzzicadenti su un piano di polistirolo, quindi trasferite delicatamente nell'essiccatore o nel forno e fate essiccare a 60° per 35 minuti.

Sulla base del piatto disponete uno strato di insalata liquida, disponete i "sassolini", il finocchietto selvatico e la granella di pistacchio, ultimate con le begonie bianche, sale alle erbe, pepe verde e scorza grattugiata di lime.
