Gelato al castagnaccio

Caldo Ottobre Toscano, fatto di sole bianco ed aria secca, di foglie cadute raggrinzite e bruciate, di 28' all'ombra...
Giuro, non sto scherzando, oggi, 10 ottobre 2014, ore 16:27, un caldo che non vi dico, 28' all'ombra, e fortuna che c'è vento, perchè qui si bolle, letteralmente!
Sui fornelli sta bollendo anche qualche altra mia magica pozione, di quelle non troppo strane questa volta, ebbene si, sto facendo il Ketchup, niente di complicato; Keira è al mio fianco che gioca con le costruzioni, ed io ammiro il cielo, che oggi è coperto da un sottile strato di nuvole, quasi un velo, che lo fa apparire tutto bianco.
Un Ottobre un'pò surreale, che comunque, mi fa venir voglia, come ogni anno, di fotografare i viali infiammati di foglie cadute, di visitare borghi storici sperduti sulle colline Toscane, di funghi, castagne, vestiti beje e pentole di rame.
Stamani, mentre facevo la spesa, ho trovato un panierino di vimini pieno di grosse e lucide castagne del Monte Amiata, ero un'pò tentata di comprarle, mi piacciono tanto bollite con il di occhietto selvatico, oppure ridotte in purea, per fare una vellutata marmellata con vaniglia e rum; dato il caldo ho rimandato l'acquisto, e mi sono tuffata a capofitto sul gelato che avevo preparato qualche giorno fa.
Di che gelato sto parlando dite?
Di un gelato perfetto per questo autunno caldo, sicuramente più caldo dell'estate piovosa e grigia che ci siamo lasciati alle spalle, un gelato fresco che racchiude tutto il gusto dei prodotti autunnali...
Era un'pò che mi frullava per la testa, l'idea di fare un gelato al castagnaccio....

Gelato al castagnaccio


3 tuorli
20 g di zucchero
1 cucchiaio di miele millefiori
50 g di farina di castagne
300 ml di latte fresco intero
250 ml di panna fresca 
1 manciata di pinoli 
un rametto di rosmarino
1 cucchiaio d'olio d'oliva
Una presa di sale rosa
1 manciata di uvetta

2 cucchiai di acqua di perfetto amore, oppure, in alternativa, di liquore alla cannella o rum.

Ammollate in 100 ml di acqua bollente l'uvetta, unendo anche i due cucchiai di liquore.
Unite a freddo tutti gli ingredienti, tranne il rosmarino, l'uvatta ed i pinoli.
Frullate con il frullatore ad immersione, quindi trasferite sul fuoco, a fiamma dolce, e fate addensare mescolando con il rametto di rosmarino.
Aggiungete metà dell'uvetta precedentemente ammollata è ben strizzata e frullate ancora.
Fate raffreddare e trasferite nella gelatiera, eccoci giunti al momento in cui per ultimare il tutto dovrete aggiungere i pinoli e la restante uvetta.
Servite impreziosendo con un filo di miele.

An October un'pò surreal, which however, makes me want, as every year, to photograph the streets inflamed with fallen leaves, to visit historic towns lost in the hills of Tuscany, mushrooms, chestnuts, clothes Beje and copper pots.
This morning, while I was shopping, I found a wicker-basket full of thick, shiny chestnut of Mount Amiata, un'pò I was tempted to buy them, I love them boiled with a little eye of the wild, or pureed to make a smooth jam with vanilla and rum; given the heat, I postponed the purchase, and I dived headfirst on the ice cream that I had prepared a few days ago.
What I'm talking about ice cream you say?
An ice cream perfect for this warm autumn, definitely the hottest of the summer rainy and gray that we left behind, a fresh ice cream that has all the taste of autumn products ...
It was un'pò that I mix for the head, the idea of ​​making a chestnut ice cream ....

Chestnut ice cream

3 egg yolks
20 g of sugar
1 tablespoon wildflower honey
50 g chestnut flour
300 ml of fresh whole milk
250 ml of fresh cream
1 handful of pine nuts
a sprig of rosemary
1 tablespoon olive oil
A pinch of pink salt
1 handful of raisins

2 tablespoons water of perfect love, or, alternatively, cinnamon liqueur or rum.

Soaked in 100 ml of boiling water raisins, combining even two tablespoons of liqueur.
United cold all the ingredients except the rosemary, uvatta and pine nuts.
Puree with immersion blender, then transferred to the fire, a gentle heat, and let thicken, stirring with a sprig of rosemary.
Add half the raisins previously soaked is squeezed and blend again.
Let cool and transfer to the ice cream maker, we have now come to the time in which to complete everything you need to add the pine nuts and the remaining raisins.
Embellishing Serve with a drizzle of honey.
