La ricetta l'ho trovata qui su pane al pane...vino al vino, un blog davvero carino, ed è stata una rivelazione, il risultato è stato ottimo, ed ho deciso che lo riproporrò molto spesso, in particolare per feste e Natale.
In pratica la ricetta prevede di far marinare il salmone per almeno 24 ore ( fino a 48, ma per me a 24 è perfetto) in una marinatura composta da zucchero di canna e sale in parti uguali.
Per i dettagli vi rimando al post originale.
Poi dobbiamo passare all'affumicatora, la ricetta prevedeva di usare segatura non trattata ed infilare tutto in forno spento per creare una sorta di camera di affumicatura.
Che ci crediate o no, la segatura che avevo a disposizione era così fine che non riuscivo a darle fuoco, quindi sono andata sul terrazzo ed ho preso dei rametti secchi di timo (un profumo di spezie buonissimo) li ho accesi, ho spento la fiamma lasciando il filo di fumo e li ho infilati in una teglia rivestita di alluminio, sopra alla teglia c'era la gratella del forno con il salmone precedentemente lavato e con la pelle rivolta verso il basso.
Ho affumicato il tutto per esattamente 60 minuti, il risultato è stato perfetto!!!
Aggiornamento: Quest'ultima foto è di un filetto di salmone affumicato con salvia, timo e legno di alloro, una vera delizia!!!

Pochi, giusto una manciata, belli secchi, appena fanno il filino di fumo, infili tutto in forno e chiudi bene, il fumo rimane li e crei una sorta di camera d'affumicatura fatta in casa, non importa creare un falò. per 2 tranci da 1 kg di peso riempi una tazza da colazione di rametti, è più facile a farsi che a dirsi heheehe, fammi sapere se ci provi!!!

RispondiEliminaun consiglio per affumicare: il mio "maestro" lo chef Antonio Sciullo ci insegnò ad affumicare in scatoloni di polistirolo (http://web.tiscali.it/Pasciolica/Imm_Aste/Polistirolo/Bottiglie/Imballo.jpg), metti il prodotto su un piano rialzato (magari una griglia) e il materiale per l'affumicatura in un piattino, accendi, chiudi e avvolgi con la pellicola... poi metti in frigo e lasci affumicare lì... a un corso con lo chef Francesco Apreda usammo questa tecnica per affumicare dei pomodorini confit (quella volta con corteccia di mango, alloro e burro) per fare degli scialatielli ai frutti di mare e nero di seppia, un piatto fantastico che sarebbe anche interessante vedere come lo interpreteresti tu, quindi non lascio la ricetta e se ti ispira vai e usa l'incredibile dote che hai ;)

Affunicare con le spezie ormai per me è gia di rigore, la prima volta che ho fatto il salmone affumicato (quello appunto nella foto) ho usato il Timo (sarò sincera, giusto perchè non riuscivo ad accendere la segatura...)ma il risultato mi è piaciuto, ed oggi ho usato Timo e Rosmarino, una delizia (ed un profumino...)

ma tesoro dove trovo il salmone? immaginavo ci volessero piu' rametti! certamente quel giorno che mi dovessi trasferire in Italia questa e' una cosa che mi piace da morire e certamente provero', vai baby che sei grande! lo sai che ti leggo anche se poi non riesco a fare niente o quasi? ho rifatto pero' la pasta con farina di ceci e ci ho aggiunto del cacao, ma poi l'ho tirata un po' troppo grossa e si sentiva l'amaro, insomma vorrei tanto postare qualcosa da linkare al tuo post ma adesso ho finito la farina, domani la ricompro e la inforno, e il fatto che sia praticamente precotta secondo me la rende perfetta per farci tutto senza preoccuparsi troppo della cottura successiva, tipo la farinata in padella viene meglio con la farina infornata o anche usarla come legante diluita con acqua al posto dell'uovo come fanno in India. RispondiEliminai pesci più a rischio di anisakis sono sopratutto i pesci azzurri come sgombri e acciughe, ma si può trovare anche in ricciole, tonni e anche in crostacei (io personalmente le ho trovate in acciughe, sgombri e scampi), nel salmone non so' quanto sia frequente trovarne.
un'altra cosa: l'anisakis è un parassita che risiede nello stomaco del pesce e, dopo la morte di questo, "scava" nella carne del pesce e va a finire un po' dove capita, nel caso in cui il pesce venga sventrato sulla nave poco dopo esser stato pescato il rischio è pressochè nullo.

Riguardo l'Anisakis ha gia risposto Tommaso, quindi è inutile che io ripeta, di solito al supermercato mi faccio mettere il pesce nell'abbattitore e poi torno a prenderlo, ma va bene anche il pesce surgelato che trovi gia pronto (lo trovi?)
