Rosso Veneziano

Siamo arrivati in quel periodo dell'anno in cui mi prende una gran voglia di farmi un guardaroba nuovo di zecca, con colori che, non so perchè, mi piacciono soltanto durante l'inzio dell'Autunno.
Perciò, quando l'aria si fa frizzante, ed i banchi al mercato si riempiono di rape e pannocchie, quando in lontananza si sente borbottoare il temporale, il cielo si fa vivido e quasi surreale, sembrando un vivido acquarello, e le foglie cominciano ad ingiallire, quello è l'unico momento dell'anno in cui i toni del beje e del marrone mi piacciono, e mi piacciono così tanto che, se avessi soldi a disposizione, mi comprerei tutto nuovo, dalla borsa al cappello.
Si, poi però vado a provarmi le cose, tipo stamani, e ce ne fosse una che mi sta come vorrei...
O che fosse fatta come vorrei...
Non capisco bene perchè, d'Estate usano gli stivali, l'inverno i sandalini, l'estate le maglie a maniche lunghe, le gonne fino alle caviglie, e l'inverno vestitini mignon, ovviamente senza maniche, maglioncini che lasciano la vita scoperta, e, udite udite, il colmo: maglioni pesantissimi, ma senza maniche.
Non so voi, ma io ho già freddo adesso, figuriamoci poi se d'inverno vado a mettermi un bel maglione senza maniche.
Si, sarà anche bello, ma io già dormo con la copertina, perciò, fate due calcoli...
Se solo sapessi cucire passerei le giornate ad inventarmi nuovi capi da indossare....

Dunque, eccoci giunti al magico momento, quello in cui vi svelo la ricetta di oggi.
Sono orgogliosissima di presentare questa mia nuova piccola creazione, non solo perchè è particolare, ed è stata spolverata, ma anche perchè, ho inventato un nuovo procedimento per ottenere delle sfoglie gustosissime di pane da avvolgere intorno agli alimenti....

Le ho chiamate

Alga Nori di Pane Rosso

Come vedrete nei prossimi giorni, questa tecnica di base, semplicissima, vi consentirà di creare mille varianti e mille gusti in poche, semplicissime mosse, e praticamente a costo zero.
Gli ingredienti di base sono il pane di campagna, ed in questo caso pomodori e basilico, ma in aggiunta al pane, si possono aggiungere erbe e spezie, i pomodori possono essere sostituiti da qualsiasi vegetale ridotto in purea, o da qualsiasi legume, ma questo procedimento lo vedremo più in là.
A voi per adesso basta sapere come ottenere questa versione base e come utilizzarla, e fidatevi, è davvero semplicissimo, in più, con un piccolo trucco, potrete ottenere delle chips al gusto pizza...
Questa versione, bella rossa, l'ho chiamata "La Toscana", perchè ha in sè gli ingredienti simbolo di questa mia terra: Olio extra vergine, basilico fresco, pane Tosano e Pomodoro.

Centrolofo viola alle erbette in alga nori Toscana di Pomodoro su salsa Rossa Affumicata


Ho chiamato questo piatto "Rosso Veneziano" per il colore della finta alga nori e della salsa, l'ho servito accompagnandolo con carotine saltate in padella con una noce di burro, un piatto coccoloso, dal sentore affumicato, vellutato al palato.
Vi ricordate il burro alle erbe Home Made?
Quello sempre spalmabile?
Vi avevo detto di segnarvi la ricetta, e che ne sarebbe valsa la pena, ed eccomi finalmente qua a svelarvi cosa stava bollendo in pentola...

Alga Nori "Toscana" di Pane Rosso


1 filoncino di pane raffermo da circa 400 g
5 pomodori maturi S.Marzano
1 mazzetto di foglie di basilico
50 ml di olio extra vergine d'oliva
sale e pepe

Tagliate a cubetti il pane raffermo ed i pomdorori,
Unite tutto gli ingredienti tranne l'olio in una pentola.
Coprite d'acqua e lasciate che il pane la assorba per bene, quindi frullate con il frullatore ad immersione. Unite altra acqua e lasciate cuocere per circa 30 minuti a fuoco dolce, fino a che la soluzione non si addenserà.
Unite l'olio aggiustate di sale e pepe e frullate ancora.
Una volta che il vostro composto avrà assunto la consistenza di una crema fate raffreddare.
Stendete su un foglio di carta da forno, cercando di ottenere uno spessore uniforme, quindi infornate a 60° per circa 30 minuti, fino a che la vostra crema non si sarà trasformata in una pellicola non appiccicosa ed elastica, come in foto.


Sfornate, tagliate a striscioline e tenete da parte.

Centrolofo Viola alle Erbette


1 filetto di Centrolofo viola da 300 g a persona
burro Home Made alle Erbe sempre spalmabile
sale e pepe

Sfilettate e deliscate il centrolofo, stendete il filetto su un tagliere e spalmatelo con abbondante burro alle erbe, salate e pepate.
Avvolgete il filetto su se stesso, invine avvolgetelo nell'alga di pane rosso.
Infornatelo in forno già caldo a 180° per pochi minuti, circa 7/10, di


Salsa Rossa Affumicata

Per l'affumicatura

rametti di timo secco
400 g di pomodorini ciliegini

Date fuoco ai rametti di timo, soffiate sulla fiamma e chiudete il timo in una pentola a fianco dei pomodorini tritati, ripetete più volte.

Per la Salsa



400 g di pomodorini ciliegini affumicati e cotti al forno
1 cucchiaio di succo d'arancia
1 cucchiaio di amido di riso
100 ml di brodo di pesce
2 gocce di tabasco
2 cucchiai d'olio al peperoncino Marina Colonna
sale e pepe

Frullate tutti gli ingredienti insieme, trasferite sul fuoco e fate addensare.

Impiattiamo



Alla base del piatto disponete unop specchio di salsa rossa, adagiatevi sopra l'involtino di pesce appena sfornato.
Ultimate con una spolverata di pepe ed un filo d'olio a crudo.
Guarnite a piacere con alcuni pomodorini arrostiti ed affumicati.

Servite accompagnando con carotine baby sbollentate e saltate in padella con il burro alle erbe.
