Golden Smoked Truffle

Quando ero piccola, molto piccola, avevo una scatolina piena di plastilina.
Non ne avevo molta, giusto un paio di panetti, di un colore solo, un arancio-mattone.
Adoravo conservare le cose per l'inverno, accumulare provviste come gli scoiattoli, guardare nonna che nel grande pentolone mescolava la borbottante marmellata di albicocche del nostro albero, adoravo la crosta caramellosa che poi, una volta tolta la marmellata dalla pentola, grattavo via con il mestolo.
Mi piaceva guardare i barattoli di marmellata, poggiati sul lucido lavello bianco, a testa in giù, con le luci della sera, riposare, a decine, prima di finire etichettati ed ordinatamente riposti, sugli scaffali del ripostiglio.
Mi piaceva guardare le bottiglie di vetro marrone emanare riflessi color tramonto, ben riempite di passata di pomodori del nostro orto, ben chiuse con quei tappi di metallo che sembravano luccicanti coroncine, lasciate a riposare, con uno sguardo verso la luna, in una cesta, avvolte tra fogli di giornale rosa.
L'idea di far provviste ha sempre fatto parte di me.
Seccare i funghi, preparare i sughi, le conserve, le marmellate...
Nonna preparava anche le acciughe sotto sale, in un gran barattolo di vetro spesso, che nei miei ricordi è alto almeno più di un metro, ma che a guardarlo bene adesso, forse sarà circa 40 cm....
Mi piaceva così tanto l'idea di conservare che, con la plastilina, creai tanti piccoli barattolini, grandi quanto una nocciola, sembravano tante piccole zucche arancioni, che riponevo in una scatolina, piena di strisce di cartone attaccate ai bordi, che servivano da mensole.
Queste piccole "zucche", contenevano gli aroma che volevo conservare, non solo durante l'inverno, ma anche nei miei ricordi...
I fiori di cipolla, per ricordarmi delle colline di Lussino, dove tra pini e viottoli stellati, un esplosione di fiori viola, costellava i prati; fiori di cipolla per ricordare il profumo del soffritto che nonna, con pazienza, preparava la sera, e girava con un mestolo di legno mentre in tv trasmettevano "Ok il prezzo è giusto", in ricordo di intere ore passate a dire "100!100!", non sapendo neanche perchè, in quel gioco , era tanto importante fare "100".
Noccioli di Albicocca e gocce di resina, per ricordare i miei pomeriggi primaverili passati sdraiata sotto l'ombra delle foglie del grande albicocco, delle mie estati passate in punta di piedi a raccoglierne i dolci frutti succosi e mangiarli in due bocconi.
Scorza D'arancia, mandarino e foglie di tabacco, per ricordare il profumo delle mani di mamma che mi sbucciava le clementine.
Mi è sempre piaciuto l'odore delle foglie di tabacco, quelle fresche, che sanno d'autunno, di storia, di indiani d'America...
Penso sia anche per questo che, se ad una come me, regalate dei sigari, la prima cosa a cui pensa è "secondo voi si possono utilizzare in cucina?"....

Certo che si possono utilizzare in cucina, tempo fa vidi un desser aromatizzato al Sigaro Toscano, poi mi soni mbattuta in un gelato al tabacco, dal gusto secco, quasi caldo, legnoso, un gusto che richiama le foglie cadute, l'autunno, un buon bicchiere di Whisky, l'immagine di un camino con il fuoco scoppiettante....

Perciò ho pensato: "creare un Dessert al sigaro... Perchè no..."
Ed è quello che ho fatto, partendo da un Sigaro Toscano.
Il Sigaro Tosano, è un particolare tipo di Sigaro, con Tabacco non conciato.
Perciò, tenetevi pronti, state per scoprire un dessert davvero particolare!

*Potete trovare il Sigaro Toscano anche in versione aromatizzata al caffè, alla vaniglia, all'anice o alla Grappa, potete utilizzarli a piacere.

Dato che, sono partita dall'idea di utilizzare un Sigaro Toscano, ho pensato di unire in un nico dessert, più elementi per il quale questa terra è nota.
Il Tartufo ad esempio, ma non solo, anche le uova di Gallina Livornese, bianche, dense e saporite.
Percià, per questo dessert, scegliete il meglio del meglio, perchè si, avete capito bene, state per assaporare un piccolo gioiellino ( è proprio il caso di dirlo, perchè è tutto d'oro) di morbido pan di spagna allo zucchero Muscovado, con un vago sentore amarognolo di liquirizia, profumato con Whisky affumicato al Sigaro Toscano, ripieno di una morbida Mousse di Mascarpone al Caffè, ricoperto da un guscio Croccante di Cioccolato Extra Fondente al Tartufo Bianco, affogato in un cremoso Zabaione di Birra alla Vaniglia

Si, lo so, detto così è lungo, e può sembrare complicato, ma in realtà, a parte gli ingredienti, che devono essere rigorosamente di prima qualità, perchè saranno loro a decidere l'esito della ricetta, realizzare questo dessert è davvero facilissimo, lo si puòpreparare in anticipo senza problemi.

Forse alcuni di voi saranno scettici leggend "birra e whisky" insieme, nella stessa ricetta, ma non preoccupatevi, in molti paesi si usa unire alla birra una spruzzatina di Whisky, ma giusto un'pò, ed in questo caso, essendo aggiunto prima della cottura in forno, il Whisky servirà solo ad aromatizzare, a rendere più secco e deciso il gusto dell'impasto, ad esaltare le note speziate di liquirizia e caramello bruciato dello zucchero Muscovado, l'alcool evaporerà in cottura, sarà solo un retrogusto piacevole, che smorzerà la nota dolce dello zabaione di Birra e Vaniglia.
Se ancora non siete convinti, sappiate che ci sono alcune birre che vengono fatte maturare dentro botti in cui è stato precedentemente lasciato invecchiare il Whisky.

Golden Smoked Truffle



Per il Pan Di Spagna

250 g di farina
50 g di fecola
40 g di zucchero semolato
60 g di zucchero di Canna Malawi*
100 g di Zucchero di Canna Muscovado
 130 g di burro morbido
3 uova di Gallina Livornese
1 bustina di lievito
40 ml di Whisky
latte intero q.b

1 sigaro Toscano


Per prima cosa affumicate Latte e Whisky, disponendoli in due ciotole separate, che diporrete in una grande pentola.
Sul fondo della pentola, dalla parte opposta, disponete uno strato di carta stagnola, su cui adagerete il sigaro.
Date fuoco alla superficie del sigaro con il cannello da pasticceria, aooena inizierà a "fumare" chiudete per bene il coperchio della pentola e trasferite in frigorifero.
Rieptete l'operazione 3 volte, lasciando riposare 20 minuti tra un'affumicatura e l'altra.
Preriscaldate il forno a 180°.
Una volta ottenuti i liquidi affumicati possiamo procedere con il Pan Di Spagna.
Nella planetaria sbattete le uova con lo zucchero, lavorate a lungo, almeno 15 minuti, fino ad ottenere un composto chiaro e spumoso.
Unite quindi il burro morbido, lavorate ancora ed unite la fecola, la farina ed il lievito, uniti insieme e setacciati, lavorate unendo a filo prima il Whisky, poi il latte.
Otterrete un composto liscio, cremoso, denso ma leggero, come in foto.


Infornate, in forno già caldo, in una teglia imburrata per circa 35- 40 minuti.
Io ho utilizzato uno stampo in silicone, a forma di semisfera, se utilizzate stanmpini piccoli il tempo di cottura si dimezzerà.

Per la Crema al Mascarpone


100 g di mascarpone
6 gocce di essenza al caffè

Con le fruste lavorate il mascarpone unendo l'essenza di caffè ed una presa di zucchero.
Giusto una presa, mi raccomando, altrimenti, una volta che il vostro tartufino sarà affogato nello zabaione, riusluterà troppo dolce.


Assemblaggio e Copertura


200 g di cioccolato fondente 70%
10 gocce di aroma al tartufo bianco oliosolubile Flavourart


Per prima cosa fate fondere il cioccolato, quindi unitevi l'aroma al tartufo (nessuno vi vieta, se lo avete, di unire anche una grattugiata di tartufo al cioccolato, io adoro sentirne i pezzettini mentre il cioccolato mi si scioglie in bocca.
Intanto ricavate dei cilindri dal pan di spagna, oppure, se avete utilizzato uno stampo a forma di semisfera, con un coltello ben affilato, tagliate a metà le semisfere e farcitele con la Crema al Mascarpone.
A piacere, se desiderate un dessert particolarmente "da adulti", potete spruzzare con poco Whisky i tartufini ottenuti.
Glassateli con il cioccolato ed attendete che si raffreddi per bene, creando un guscio croccante.
Rivestite ogni tartufino, con una foglia d'oro Battiloro.

Zabaione di Birra alla Vaniglia


3 tuorli
100 g di zucchero
90 g di birra Bianca Lancia Flea
1/2 bacca di Vaniglia (solo i semi)

La Vaniglia è una parte importante di questo zabaione, i semini, oltre a conferire un profumo pdolce e fruttato, scoppietteranno in bocca, creando un piacevole effetto.
Unite in un pentolino tutti gli ingredienti, trasferite su una fiamma dolcissima e lavorate con le fruste.
Il composto sarà pronto quando risulterà chiaro e spumoso.
Fate attenzione a non alzare troppo la fiamma, altrimenti il calore eccessivo farà coagilare le uova.

La Scelta dello Zucchero


Come avrete notato, nel Pan di Spagna, sono presenti tre tipi differenti di zucchero.

Il primo, Il Muscovado, è uno zucchero grezzo di canna, composto da piccoli cristalli umidi che profumano di melassa, in bocca ha un aroma intenso di liquirizia e caramello, si sposa benissimo a ricette Ho scelto questo zucchero per non conferire al dessert un'eccessva dolcezza, vista la presenta dello zabaione.

Il secondo zucchero grezzo di canna Malawi, dai cristalli bruni, simile al muscovado ma più secco e delicato, potete sostituirlo con il comune zucchero di canna.
Il terzo zucchero, più comune, che noi tutti consciamo, è lo zucchero semolato, piccola aggiunta in questa ricetta per far si che il pan di spagna rimanga umido ma più facilmente lavorabile.

La Scelta della Birra

Birra Bianca Flea
Birra chiara puro malto prodotta con malto d' orzo e malto di frumento, dal gusto fresco, leggermente acidula, molto fruttata e poco amara, speziata, schiuma compatta, cremosa e aderente.
Caratteristiche: non filtrata, non pastorizzata
Fermentazione: alta, rifermentata in bottiglia

La Storia

La relazione tra i due fu segreta e tormentata, ma tanto profonda e appassionata da essere l'unica - almeno stando alle cronache e alle leggende popolari - a durare lungo tutta la vita dell'imperatore.
Delicata e gentile, Bianca fu in effetti durante la sfolgorante vita di Federico una presenza sempre costante e discreta. Si dice che il matrimonio avvenne soltanto alla fine della vita della donna, al fine di legittimare la posizione e l'ascesa politica del figlio nato dalla loro unione anni prima, quel re Manfredi('biondo era e bello di gentile aspetto', sempre secondo Dante) che fu l'ultimo splendido re svevo di Sicilia.

Smoked Golden Truffle

100 g of mascarpone
6 drops of coffee essence

Assembly and Cover

200 g dark chocolate 70%

Eggnog Vanilla Beer

3 egg yolks
100 g of sugar
