"Sembra carne ma non è", quando la tartare è VEG

Ci sono piatti che se presentati come "surrogati" della carne perdono parte del loro potenziale, questo perchè la maggior parte delle persone pensa che un piatto in cui la carne è sostituita da "altro" sia un piatto privo di gusto o di sostanza.
Non esiste ragionamento più sbagliato.
Ferran Adrià dice che un bravo chef sa trasformare un gambero in un capolavoro, questo discorso non vale solo per i gamberi, ma per tutti gli altri ingredienti, le verdure possono essere protagoniste del piatto, e non devono essere considerate solo un contorno o un accompagnamento, la cucina di Alain Passard, 3 stelle Michelin, ne è un esempio, nel suo menù le verdure sono sempre presenti, e molto spesso anche protagoniste.

Quest'oggi serviremo un pomodoro.
Non un semplice pomodoro ovviamente, andremo ad esaltarne il sapore, ed a condirlo in modo che le sue note erbacee e speziate vengano esaltate...
Lo tratteremo in modo che la sua consistenza diventi simile a quella della carne, e lo impiatteremo come se fosse una tartare, con un piccolo aiuto visivo, un uovo, completamente vegetale, di cui vi parlerò a breve...

Tartare di pomodori del Piennolo
 


per 2 persone

500 g di pomodori del Piennolo
olio extra vergine d'oliva gusto robusto
zucchero di canna
sale grigio

Incidete la buccia dei pomodorini e tuffateli per qualche secondo in acqua bollente, scolateli e pelateli, eliminate i semi e il picciolo e disponeteli su una teglia rivestita di carta da forno.
preriscaldate il forno a 140°.
Spolverate i pomodorini con poco zucchero di canna e poco sale, conditeli con un filo d'olio e infornateli per un paio d'ore.
I pomodorini si disidrateranno, il sapore si concentrerà e la consistenza sarà più compatta, niente di più semplice.
Quando saranno freddi tritateli grossolanamente e tenete da parte.

Per il condimento


una presa abbondante di polvere di olive nere
qualche ciuffetto di aneto
qualche foglia di basilico
olio extra vergine d'oliva
aceto balsamico Guerzoni
pepe nero macinato fresco

Condite la tartare di pomodori con polvere di olive nere (o un trito di olive nere dolci al forno), olio, aceto, pepe nero e le erbe fresche.

Avete appena realizzato una ricetta che di base è vegana, ma richiama tantissimo il sapore del parmigiano, perciò aggiungete riccioli di parmigiano o lievito vegetale in scaglie, se decidete di mantenere veg e senza lattosio questa ricetta.

Perchè ho scelto i pomodori del Piennolo?
La sua polpa è soda e compatta, un esplosione di sapore, in bocca è dolce con un retrogusto acidulo e racchiude in se un vago sentore di spezie tostate, il suo sapore intenso e deciso è perfetto per questo piatto.
