Pavlova Veg

Quando leggiamo di una ricetta preparata senza un ingrediente da molti considerato indispensabile per la sua buona riuscita, ci immaginiamo un piatto senza sostanza , con una dubbia consistenza e con poco sapore.
Niente di più sbagliato.
A volte sustituire un ingrediente è più facile di quanto si pensi .
Non sempre sostituire significa mettersi alla ricerca di ingredienti astrusi , difficili da prununciare e da trovare , molte volte quello che ci serve lo troviano nella dispensa.
Mettiamo il caso che siate allergici alle uova, oppure che il vostro medico ve ne abbia vietato il consumo, o magari avete scelto di diventare vegani; ci sono persone che proprio non riescono a fare a meno di alcune cose preparate con le uova, mia figlia, ad esempio, non è golosa di dolci, ma non riesce a fare a meno delle meringhe, ne mangerebbe fino a scoppiare, classiche, farcite di panna o intinte nel cioccolato, quasi tutti amano le meringhe.
Periò oggi ci soffermiamo su una ricetta a base di meringhe, realizzate senza uova...

Vi chiederete come sia possibile, ottenere un albume montato a neve senza un albume, beh, è possibile, semplice ed economico, nessun sostituto a base di polverine e addensanti, assolutamente no, ma un prodotto di scarto, che renderà questa preparazione, oltre che buona, anche economica...

L'ingrediente necessario per questa magia è l'acqua di conservazione dei legumi, proprio quella che troviamo nelle scatolette di latta di legumi precotti.
Prima di storcere il naso sappiate che l'acqua di conservazione dei legumi non sempre è salata, per questo è bene scegliere una lattina in cui sia presente la dicitura "senza sale aggiunto" o in cui il sale non compaia tra gli ingredinti, ad ogni modo, anche se fosse presente una presa di sale, il risultato finale non sarà comunque compromesso, vi ricordo che era usanza delle nostre nonne aggiungere una presa di sale agli albumi montati a neve.
L’acqua di conservazione dei legumi contiene un altissima percentuale di proteine e di amidi che fanno sì che il liquido in questione si comporti letteralmente come l’albume, questa acqua viene chiamata «aquafaba».
È possibile utilizzare l’acqua dì cottura di qualsiasi tipo di legume, anche se i ceci sono più indicati, poichè l'acqua dei ceci ha un sapore più neutro, mentre quella dei cannellini è più gelatinosa ed a volte "contaminata" dalla polpa dei fagioli, quella dei borlotti è essenzialmente molto forte come sapore, il che la rende comunque ottima per preparazioni più amare (meringhe al cacao o al cioccolato fondente, oppure abbonate a creme di frutta secca), e quella dei fagioli di Spagna molto saporita (con un risultato molto simile al gusto di una meringa dolce-salata, simile al caramello salato), è possibile utilizzare sia l’acqua di cottura dei legumi cotti in casa, che l’acqua di conservazione dei legumi in scatola, anche se, devo ammetterlo, il processo di inscatolamento e conservazione sottovuoto fa si che le proteine e gli amidi dei legumi passino in quantità minore all'acqua dei legumi conservati, perciò l'aquafaba dei legumi del supermercato renderà di più e monterà assai meglio rispetto all'acqua dei legumi cotti in casa, inoltre, scegliere una lattina dallo scaffale vi permetterà un notevole risparmio di tempo.

Le regole sono poche, essenzialmente in effetti non ci sono, dovrete solo tener presente di aver davanti un albume ed il gioco sarà fatto, si dice che se l'aquafaba è fredda monta più facilmente, ma se avete una lattina in dispensa, a temperatura ambiente e vi vien voglia di meringhe, potete prepararle senza problemi, monterà comunque ed in modo egregio.

Con l'aquafaba è possibile sostituire l'albume in qualsiasi ricetta, dalle torte ai biscotti, passando per i tanto amati macaron fino ad arrivare ai marshmallows e al torrone, troverete

Per la meringa

150 ml di aquafaba
140 g di zucchero semolato


Filtrate il liquido con un colino a maglie fitte, trasferitelo in una planetaria e iniziate a montare con lo sbattitore elettrico aggiungendo lo zucchero a più riprese.
Montate a lungo fino a che il composto non sarà bianco e spumoso.
Preriscaldate il forno a 120°.
Versatelo il composto in una sac a poche o create dei cerchi utilizzando un cucchiaio. Disponete le meringhe su una teglia rivestita di carta da forno e infornate per circa 90 minuti, ricordatevi di non aprire lo sportello durante la cottura o comprometterete il risultato.
Sfornate i cerchi di meringa e tenete da parte.

Per la panna veg

150 ml di panna vegetale o di panna di cocco
zucchero q.b a piacere


Montate la panna zuccherandola a piacere.
Diponete sul piatto da portata la base di meringa, coronatela con uno strato abbondante di panna, e diponetevi sopra fettine di frutta a piace, adagiate delicatamente sopra alla frutta un altro cerchio di meringa e procedete così fino ad ottenere almeno altri due strati.
Utilizzate la frutta che più preferite, aggiungete scaglie di cioccolato fondente per rendere il tutto più goloso.
Io ho utilizzato fragole, banane, mirtilli, menta e petali di fiori di fragole.
