Il Tartufo Istriano

Il tartufo è un fungo ipogeo che nasce sotto terra, vive in simbiosi con le radici di alcune piante, come la quercia, il nocciolo, il tiglio, il pioppo...

Sapevate che la forma dei tartufi è determinata dalle caratteristiche del terreno in cui crescono? 
In un terreno morbido crescerà un tartufo di forma sferica, mentre in un terreno duro, pietroso o con molte radici il tartufo assumerà una forma bitorzoluta.
Esistono molte specie di tartufo, il bianco pregiato (Tuber magnatum Pico), il nero pregiato (Tuber melanosporum Vitt.), il tartufo nero estivo (Tuber aestivum Vitt.).


Oggi voglio parlarvi del tartufo bianco Istriano, che si sta facendo largo sulle tavole delle buone forchette, per le sue qualità ed il suo sapore viene elogiato e paragonato al prezioso tartufo bianco d'Alba Piemontese. 
Il tartufo bianco Istriano è stato considerato dagli esperti, uno dei tartufi più pregiati al mondo, il prezioso alimento perciò ha ottenuto numerosi ed importanti premi.
Il segreto sta nel territorio, da oltre due millenni la foresta di Montona, che sembra uscita da una favola dei fratelli Grimm è conosciuta come la zona dei tartufi, la scoperta del tartufo qui è una cosa recente, furono degli operai piemontesi che agli albori degli anni 30' trovarono questo prezioso fungo, la storia narra che le spore siano arrivate fin qui con le traversine di legno portate dagli operai piemontesi, ed impegate per la costruzione della Ferrovia Parenzana, costruita dagli Asburgo per collegare Trieste con Parenzo nel 1902; in quegli anni nella foresta di Montona si potevano raccogliere fino a 7 kg di tartufi al giorno.
L’Istria è l’unico luogo al mondo in cui crescono tartufi bianchi e neri che si possono raccogliere tutto l'anno.


Non mancano ovviamente feste e sagre a base di tartufo, si inizia il secondo fine settimana di settembre a Pinguente, dove nella piazza si prepara la "fritaja", una frittata gigante con tartufi e formaggio, preparata con oltre 2000 uova e 10 kg di tartufi, si prosegue poi con la Domenica bianca a Sovignacco, che si tiene il primo weekend di ottobre, qui troverete tanti prodotti caserecci a base di tartufi, dal miele al formaggio con produttori provenienti da tutta l'Istria..
A Levade ogni anno, a inizio novembre si svolge il Tuberfest, il festival di tartufi più famoso dell'Istria, con aste, degustazioni, ristoranti che proprongono ricette al tartufo, stand gastronomici, caccia al tesoro e dimostrazioni di caccia al tartufo.

La fritaja Istriana a base di tartufo è sicuramente uno dei prodotti imperdibili da assaggiare, fa parte di quella che da molte parti viene chiamata "colazione contadina", consiste in una frittata di uova morbide e cremose, con aggiunta di formaggio, tartufi frechi grattugiati aggiunti in cottura e alla fine, una prelibatezza!
Consigliamo di assaggiare anche i fusi al tartufo un tipico formato di pasta che troverete solo qui, se volete invece portare qualcosa a casa con voi consigliamo l'olio, classico o aromatizzato al tartufo, l'olio Istriano è premiato e considerato al pari di quello Toscano, provare per credere!
Durante i festival e le sagre i ristoranti proporranno varie specialità a base di tartufo, ottimo anche l'abbinamento con il pesce o con il gelato.

L'istituzione del tartufo Istriano si chiama "Giancarlo Zigante", tartufaio dal 1981, entrato nel Guinnes dei Primati per aver trovato nel 1999 con la sua cagnolina Diana, il tartufo bianco più grande del mondo, ben 1.310 chilogrammi, denominato "Millennium".
Giancarlo Zigante lavora e vende il tartufo Istriano, oggi ha due stabilimenti che trattano ed esportano 15 tonnellate di tartufo ogni anno, e diversi shop, i suoi prodotti si trovano anche on line, sulla pagina Facebook "Zigante Tartufi International", o direttamente sullo shop del sito "Zigante Tartufi", a Levade troverete anche il suo ristorante, citato dalla Guide Michelin, qui serve piatti di altissimo livello, in cucina lo Chef Damir Modrušan, Polesano classe 1970, la sua è senza dubbio una cucina gourmet, i piatti che propone sono realizzati con le eccellenti materie prime del territorio, abbinamenti ricercati una buona carta dei vini, ambiente classico, il rapporto qualità-prezzo è eccellente ed è una tappa imperdibile per gli amanti del tartufo.

Per la famiglia Karlić la caccia al tartufo è una tradizione che si tramanda da tre generazioni, noi abbiamo provato quest'esperienza e possiamo dirvi che è davvero unica nel suo genere, verrete accolti da una ricca colazione contadina, a base di formaggio e salame al tartufo, bruschette di pane appena sfornato condite con olio e tartufo fresco e l'immancabile fritaja, una ricarica di energia indispensabile per addentrarsi nel fitto della foresta.
In compagnia dei cani vi addentrerete nel cuore del bosco, qui la luce del sole viene filtrata dai rami, e si trasforma in oro liquido che scende dalle chiome degli alberi, non c'è che dire, l'ambiente è magico, la sensazione è quella di pace e quiete, non a caso a poca distanza si trova il fiume Quieto, i cani, scodinzolanti, annuseranno il terreno fino a scovare i preziosi tartufi.
Per noi è stata un'emozione vedere il cane puntare, scavare e trovare il nostro primo tartufo, non credevamo di trovarne uno, ed invece ne abbiamo trovati tanti.
Tornati alla casa dei Karlić avrete la possibilità di acquistare formaggi, olio, creme e prodotti a base di tartufo, ma anche vari gadget, comprese le magliette; sulla loro pagina Instagram "Karlić Tartufi" troverete le foto della caccia al tartufo e dei loro piatti.
Non hanno uno shop on line, ma se vi piacciono i loro prodotti basterà contattarli via mail e ve li faranno recapitare in un lampo. 


 In Istria sono tanti i ristoranti di alto livello che potrete trovare, ma solo alcuni hanno ricevuto il marchio "Tartufo Vero", conferito direttamente dalla regione, viene conferito ai ristoratori e alle Konobe (trattorie), che cucinano il tartufo con maestria, con altissimi standard culinari, solo i ristoranti che eccellono nella creatività, nel gusto e nella presentazione e che inseriscono il tartufo sia nel menù estivo che in quello invernale possono ambire a questo prezioso riconoscimento, tra questi troviamo anche il sopra citato ristorante Zigante a Livade, di seguito una lista dei ristoranti insigniti dal marchio "Tartufo Vero", ne abbiamo provati alcuni per voi: il ristorante San Rocco a Verteneglio e la Konoba Toklaria.

Chiudiamo in bellezza con la ricetta della Fritaja al tartufo

Fritaja Istriana al Tartufo nero 


50 g di tartufo nero fresco
50 g di burro di alta qualità
50 g di parmigiano grattugiato
30 g di formaggio al tartufo grattugiati
8 uova freschissime
sale
pepe nero appena macina

In una padellina fate sciogliere il burro a fuoco dolce, grattugiatevi la metà dei tartufi neri e lasciateli cuocere un minuto nel burro.
A parte sbattete le uova, salatele, aggiungete il parmigiano ed il formaggio al tartufo, mescolate energicamente e trasferite in padella.
Cuocete a fuoco basso mescolando costantemente, pepate ed unite il restante tartufo tagliato a scaglie.

We give a treat with the recipe of Fritaja with truffle 

Fritaja Istriana with black truffle 
50 g of fresh black truffle
50 g of butter the high quality
50 grams of grated parmesan cheese 
30 grams of grated truffle cheese
8 freshly chopped eggs freshly 
salt
ground black pepper

In a small pan melt the butter over a gentle flame, grate half the black truffles and let them cook for a minute in the butter.Open the eggs, add salt, add the parmesan and the truffle cheese, mix vigorously and transfer to the pan. Cook over low heat, stirring constantly, pepper and add the remaining truffle cut into flakes.
